Then, (after 20 seconds) a bell will toll, and another one will spawn. The key factor here is the "in-fighting" mechanic that this boss has. There are strategies to be considered and tactics to be used but in the end, the only thing that will actually help you defeat the boss is a lot of practice (this usually includes dying to the boss a couple of times). In general the Abyss Watchers are often considered to be the first "Wall" a new player encounters. So you can just whack at them two times and then run away and dodge until you find an opening again. They are probably the easiest boss to stagger with normal weapons and if you have a heavy weapon (Great Club, Vordt's Hammer, any Greatsword) you will stagger them with pretty much every hit. The Abyss Watchers are pretty fast but also pretty fragile. Note that getting the timing right will take a lot of practice but it will make the boss (and future bosses) a cakewalk once you get it down. Try to abuse this to get through the first phase quickly and to conserve estus. In both phases the attacks can be parried with the exception of jumping attacks. In addition to the summoning options mentioned in answer there are a few weaknesses you can and should exploit. However, they have an advantage over other racers they can drive directly over terrain that would normally reduce speed, and it won't affect them. Technique characters tend to have the best handling, but aren't as speedy. There are three stages of boost from drifting, indicated by the colour of the exhaust flames. You'll want to utilise this, as the longer you drift, the stronger your boost will be when you come out of it. Your drift will be counted as one continuous slide rather than two. If you want to start drifting the other way, hold the left stick in the opposite direction, briefly let go of L2, and then hold it again. The important thing to remember is that you can keep a single drift going even when you change direction.
